What would I be doing?

The Ched de Cuisine is responsible for developing an environment that creates excitement for guests and employees, promoting and retaining a highly skilled work force.  The Chef de Cuisine is also responsible for overseeing food preparation on all shifts for an assigned food outlet to ensure quality food and guest satisfaction.  Coordinates with front-of-the-house staff to ensure effective coordination of service in order to achieve the company’s food service goals.

Responsibilities

  1. Responsible for actively building and retaining customer relations and acts as a mentor to employees in order to provide superior customers service level.
  1. Hires, trains, motivates, evaluates and supervises staff to ensure that employees receive adequate guidance and resources to accomplish established objectives.
  1. Establishes and maintains training and development procedures to ensure superior customer service standards are achieved.
  1. Maintains department objectives, standards, guidelines and budget to ensure proper management of department.
  1. Monitors food purchasing, staffing, food preparation and food inventory in order to control food and labor cost and waste, ensuring adherence to the budget.
  1. Monitors and evaluates food preparation by observing cooking techniques and tasting results to ensure food quality and consistency according to standards.
  1. Assists in developing menu changes to ensure variety and food quality.
  1. Monitors and advises on storage of food items to ensure quality of food and compliance with health requirements
  2. Assists Executive Chef and Banquet Chef in other kitchen areas on a relief basis as necessary.

 

 

WORKING CONDITIONS/ESSENTIAL FUNCTIONS

  • Ability to use all tools associated with the position including but not limited to knives, slicers and choppers.
  • This position is subject to varying noise levels, extreme heat and cold; proper clothing is provided.
  • Ability to review and comprehend recipes and other necessary documentation.
  • Ability to inspect quality of all food items.
  • Ability to observe and direct actions of subordinates, monitor all activity within the room, and to inspect and maintain areas for which responsible.
  • Ability to move effectively and efficiently throughout work areas.

 

What are we looking for?

These skills are typically acquired through a minimum of eight years progressive food preparation experience, or through the completion of a culinary arts degree or accredited apprenticeship and four years of progressive food preparation experience with at least one year in a supervisory capacity.

  • Knowledge of and ability to prepare stocks, soups, mother sauces, all varieties of meat including veal, pork, beef, lamb, poultry, game and seafood.
  • Complete understanding of kitchen operations.
  • Demonstrated organizational skills, budgeting experience and full understanding of financials.
  • Previous supervisory experience.
  • Must have previous Asian cuisine experience
  • Must be able to speak English

ADDITIONAL REQUIREMENTS: (Licenses, Certifications, Testing, etc.):

  • Possession of, and ability to obtain and maintain a valid gaming license within assigned state of employment and other jurisdictions
  • Must successfully pass background check
  • Must successfully pass an alcohol and drug screening
  • Must be 21 years of age
